Aromatic, slightly acrid (spicy) and slightly bitter.

In the fruits of Selim pepper, the essential oil (2-4.5%) consists mainly of ß-pinene, 1,8-cineol, a-terpineol, terpinene-4-ol, paradol, bisabolene and other terpenes. In other research, linalool (E)-ß-ocimene, a-farnesene, ß-pinene, a-pinene, myrtenol and ß-phellandrene were identified, along with traces of vanillin and 3-ethylphenol (Journal of Agricultural and Food Chemistry, 47, 3285, 1999)

Later, Selim pepper was sold only as a pepper substitute (or replacement) in times of war or lack of resources.

The last time we found it was after the Second World War until the 1960s. Today it is difficult to find it outside the countries of production.

Selim seed is found from Ethiopia to Senegal.
Its taste is a mixture of cubeb and nutmeg. Its use is frequent in all countries where this plant is found in the wild.
It is used as a spice but also for its medicinal and aphrodisiac properties.
In Senegal, it is used to flavour Touba coffee, a traditional drink of the Mourides, but also to make aphrodisiac drinks.

Xylopia aethiopica, family Annonaceae, also called "guinea pepper", "Selim seeds", "black pepper", kpédjélékoun, or "liken" is a species of evergreen trees whose dried fruits are used as a spice.

  • It can measure up to more than 20 m in height.
  • The fruits look like dark brown bean pods, about 2.5 to 5 cm long. Each pod contains about 5 to 8 kidney-shaped seeds. The pods are aromatic but the seeds are not.
  • The flavour of Xylopia is a bit pungent and slightly bitter.
  • It is found in tropical Africa in tropical rainforests, near the coast and also along rivers in arid savannah areas.
  • It can be found in Angola, Benin, Burkina Faso, Cameroon, Ivory Coast, Ethiopia, Gabon, Gambia, Ghana, Guinea-Bissau, Kenya, Liberia, Mozambique, Nigeria, Uganda, Central African Republic, Sao Tome and Principe, Senegal, Sierra Leone, Sudan, Tanzania, Togo, Zaire and Zambia.

Once Selim pepper was used throughout Europe, but it almost disappeared with the massive importation of black pepper from India in the 16th century. Today, it is difficult to find outside the countries of production.
